Sodium benzoate, C6H5COONa is an organic chemical compound. It is the sodium salt of benzoic acid, which is used as a preservative. On an industrial scale, it is obtained synthetically. Sodium benzoate has bacteriostatic and fungistatic properties, inhibits the growth of yeast, mold and butter, acetic and (to a lesser extent) lactic bacteria. Its activity is enhanced by the presence of sulfur dioxide, carbon dioxide, table salt, sugar and sorbic acid (or its salt).
Occurrence
Sodium benzoate occurs in the form of a benzoate anion mainly in berries, but also in small amounts in mushrooms, cinnamon, cranberries, cloves and some dairy products (effect of bacterial fermentation).
Application of sodium albumin:
- a preservative widely used in the industry,
- also acts as a solubilizer,
- is a component preventing corrosion in liquids for storing surgical instruments,
- is a component of diagnostic aids,
- it is widely used in amateur and commercial pyrotechnics. On its basis, for example, a wheezing mixture (sweat whistling or SSA) is made. It is also a good yellow flame dye (thanks to the sodium content) that produces large amounts of gas during combustion.
