Sodium benzoate, C6H5COONa - organic chemical compound, sodium benzoic acid, used as a preservative.
On an industrial scale it is obtained synthetically.
It has bacteriostatic and fungistatic properties, inhibits the growth of yeast, mold, butter, acetic and, to a lesser extent, lactic bacteria.
The presence of sulfur dioxide, carbon dioxide, table salt, sugar, sorbic acid (or its salt) increases its activity.
Occurrence
In the form of a benzoate anion occurs mainly in berries, as well as in small amounts in cranberries, mushrooms, cinnamon, cloves and some dairy products (effect of bacterial fermentation).
Application of sodium cabbage
Sodium benzoate is widely used in industry as a preservative.
It also acts as a solubilizer.
Other applications
It is also a component preventing corrosion in liquids for storing surgical instruments.
It is a component of diagnostic aids.
Application in pyrotechnics
Sodium benzoate is quite widely used in amateur and commercial pyrotechnics. It is made of it, among others wheezing mixture (sweat whistling or SSA). It is a good yellow flame dye (thanks to the sodium content) that burns and generates large amounts of gas.
