Sodium benzoate, C6H5COONa is an organic chemical compound. It is the sodium salt of benzoic acid, which is used as a preservative. On an industrial scale, it is obtained synthetically. Sodium benzoate has bacteriostatic and fungistatic properties, inhibits the growth of yeast, mold and butter, acetic and (to a lesser extent) lactic bacteria. Its activity is enhanced by the presence of sulfur dioxide, carbon dioxide, table salt, sugar and sorbic acid (or its salt).<\/p>\n<\/p>\n
Occurrence<\/p>\n
Sodium benzoate occurs in the form of a benzoate anion mainly in berries, but also in small amounts in mushrooms, cinnamon, cranberries, cloves and some dairy products (effect of bacterial fermentation).<\/p>\n<\/p>\n
Application of sodium albumin:<\/p>\n
