Sodium nitrite is used in the formation of organic derivatives of nitrous acid, dyes. It counteracts the multiplication of bacteria.
When using excess sodium nitrite, during the processing (especially cooking) of prepared meat, nitrites may react with amino acid degradation products to form nitrosamines with carcinogenic properties.
