Application
Potassium metabisulphite is used as a preservative. It is also useful when bleaching straw, in photo baths and in dyeing. It has properties that inhibit the growth of bacteria and mold, and is also an excellent antioxidant. This substance is used in many industries. It has disinfecting and sterilizing properties.
Disinfection of wine and brewing equipment
Dosage: 20-30g of potassium metabisulphite per 1 liter of water (2-3% solution).
Potassium pyrosulphite is ideal for decontamination and sterilization of various types of wine equipment (balloons, bottles, corks, containers, hoses, etc.). Only wine prepared in clean and sterile conditions can become a high quality product. Potassium metabisulphite solution intended for disinfection of wine making equipment should be prepared just before its use, as it is not stable (after rinsing it is not re-usable). The disinfectant properties are primarily characterized by substance vapors, so when disinfecting balloons or bottles, you must pour the solution of sodium metabisulfite into them and then close them tightly for 5 -15 minutes.
Potassium metabisulphite prevents the growth of bacteria, fungi and wild yeast. Directions for use: Dissolve a dose of the substance in a small amount of wine or must, then add to the whole and mix.
Stabilization of the setting: 5-8 g per 100 L depending on the condition of the must.
Stabilization of young wine: after fermentation (usually after the first wine load), 6-10 g per 100 L should be added to stop this process - light wine can be obtained in this way.
Before pouring the finished wine into bottles, it is worth performing additional sulphurization, which affects its stabilization and preservation: 6-10 g per 100 L.
